Production Style

Aultmore uses unpeated barley and long fermentation to produce a notably clean, estery spirit. The 18-year-old is matured primarily in American oak casks and bottled at 46% ABV without chill filtration.

Nose

Fresh apple and pear lead, joined by lemon zest and blossom honey. Beneath the fruit sits a layer of vanilla cream and polished oak. With time, faint almond and soft spice emerge. It is precise and well delineated, though never exuberant.

Palate

Medium-bodied and controlled. Ripe orchard fruit meets malt sweetness, followed by vanilla, toasted oak, and a gentle white pepper lift. The texture is firm without becoming heavy. The oak is present but integrated, giving shape rather than dominance.
