Production Style
Daftmill is a family-owned farm distillery in Fife, operating seasonally around the agricultural year. The barley used is grown on the estate. Distillation takes place in short campaigns, and maturation for this release was in first-fill ex-bourbon barrels. The whisky is bottled at natural colour and without chill filtration.
Nose
Immediate clarity. Lemon peel, green apple, and pear skin lead. Then vanilla cream, fresh hay, and light honey. There is a soft floral note, almost daisy-like, alongside clean malted barley. The oak is present but disciplined. The precision here is not accidental.
Palate
Silky and composed. Sweet malt and orchard fruit form the core, with citrus oil and gentle vanilla building around it. White pepper and a faint almond dryness provide tension. The first-fill bourbon casks give structure without smothering the spirit. It is a lesson in proportion.
Finish
Medium length. Lemon zest, cereal sweetness, and light oak spice linger steadily before tapering off with a clean, slightly chalky dryness. It fades with intention rather than weakness.
