Production Style

Matured exclusively in Pedro Ximénez and Oloroso sherry casks and bottled at 43% ABV. Natural colour.

Nose

Dense and inviting. Raisins, sultanas, and fig compote lead the way, followed by dark honey and treacle. There is cocoa powder, orange peel, and polished oak beneath. It smells reassuringly traditional, almost nostalgic. Nothing feels rushed.

Palate

Fuller than the strength suggests. Stewed fruits and dates arrive first, wrapped in milk chocolate and brown sugar. Cinnamon and nutmeg provide lift, while toasted oak gives grip. The sweetness is assertive but controlled. The structure holds.

Finish

Medium to long. Drying oak spice gradually overtakes the sweetness. Hints of dark chocolate and coffee linger, with a final echo of dried fruit. It closes firmly rather than softly.
