Production Style

Matured in a combination of Oloroso sherry and American oak casks, followed by a marrying period in large oak tuns before bottling at 40% ABV.

Nose

Rich but measured. Baked apple, raisin, and dried fig rise first, followed by toffee and polished oak. There is gentle cinnamon and a hint of nutmeg beneath the fruit. It feels settled and cohesive, with no sharp edges.

Palate

Silky texture. Stewed orchard fruit and sultana lead into caramel, toasted almonds, and soft spice. The oak is present but integrated, offering structure without dominance. It builds gradually rather than exploding, which suits its temperament.

Finish
